Recipe: Jen's Chocolate Nut Pie

More

This recipe for nut and chocolate pie comes together almost as fast as the the Kentucky Derby horses can run. Just make sure you take more than two minutes to savor it.

Makes one pie

    • 1 unbaked pie crust—your favorite recipe (this one makes two) or frozen variety
    • 1 cup white sugar
    • 1 cup corn syrup
    • 4 large eggs
    • ½ cup butter (melted, then cooled to room temperature)
    • 2 tablespoons bourbon (optional)
    • 1 teaspoon vanilla
    • ¼ teaspoon of salt
    • 1 cup coarsely chopped pecans (leave a few as halves)
    • ½ cup chocolate chips

Preheat oven to 350 F.

Beat together sugar, syrup, eggs, butter, bourbon (if using), vanilla, and salt. Stir in the nuts and chocolate chips until evenly mixed.

Pour the filling into the crust and bake for 45 minutes, or until set and slightly puffy. Let cool to room temperature, chill if desired, and serve with whipped cream.
