Mr. Chatwani laughed incredulously when I asked him for his lassi recipe. "It is obvious. Only yogurt and sugar whirled together," he claimed. After all, no self-respecting lassi maker wants to be caught adding water and making it thinner! A good one is thick like a milkshake. Here is my recipe.
Serves 1
• ½ cup yogurt (full-fat is preferred)
• 1 tablespoon homogenized milk
• a few pieces of fresh, ripe mango
• brown sugar to taste
Blend all ingredients, and serve chilled.
