A reader writes:

Regarding your report on offal, St. John Restaurant in Clerkenwell London is consistently rated one of the world’s top 20 restaurants.  Spleen, tongue, snout etc.  Last time I was there, Madonna sat in the bar area in her trademark “don’t look at me” flat cap and silver puffer jacket.


This sort of “nose to tail” dining isn’t because of the credit crunch (Grouse at USD$50), it’s a reflection of trendy twenty somethings in media.

Another:

I lived for many years on a farm where we raised our own beef and ate all parts.  I introduced my kids to such delicacies as stuffed beef heart, tongue sandwiches, liver and onions and my personal favorite, braised ox tail.  Has anyone checked the price of ox tail lately?  Believe me, hamburgers are much cheaper.
